That sandy, melt-in-your-mouth texture in a jar of street-side ghee isn't an accident; it's a slow-motion construction project happening right on the shelf.

Ghee is a mix of different fats. When it cools down slowly, the "stiff" saturated fats have enough time to find each other and huddle into tiny, solid beads.

Because they aren't in a rush to freeze, these fats form distinct crystals instead of a smooth, waxy block. You're basically eating a landscape of microscopic fat-boulders swimming in golden oil.

Wait, so what happens if you shove it in the fridge immediately?
