If beans weren't the main course for our ancestors every single day, it was simply cheaper to let the freelance bacteria handle the prep work. They get a free meal, and we save our resources for high-priority tasks like fueling the brain.

It’s the ultimate lazy management move—delegating the messy, gassy cleanup to the microscopic subcontractors living rent-free in your basement.

How did these tiny subcontractors even get into our basement in the first place?

You aren't born with a full staff. At birth, your basement is a brand-new, sterile facility waiting for its first delivery of personnel.

You hire them from the world - through milk, the dirt on a carrot, or even a kiss. Like a sourdough starter, once those first microbes land in your warm gut, they start a family business.
