Flour and water are like neighbors who start building "gluten fences" the moment they meet. In bread, those tough ropes are great. In pie, they’re a disaster—you want a crust that shatters, not one that’s chewy.

Vodka is the ultimate "fake" liquid. It provides the moisture needed to bind the dough together so you can roll it out, but it’s chemically incapable of helping build those gluten fences.

Since it’s nearly half alcohol, you get the hydration without the toughness. The booze evaporates in the oven heat, leaving behind nothing but air and perfect, crisp flakes.

Hold on, won't the pie taste like a shot of straight vodka?

Think of alcohol as a "ghost chef." It helps prep the dough but pulls a disappearing act the second the oven heats up. Since ethanol boils at a much lower temperature than water, it is the first to evaporate and exit through the vent.

You aren't just dumping a gallon of soup into raw dough. You’re relying on the oven's heat to set those structural fences instantly, turning them into a rigid, golden cage before the weight takes over.
