The 19th-century 'Swill Milk' scandal in New York City

In 1850s New York, distillery owners realized they could turn whiskey trash into "milk." They crammed cows into filthy basements and fed them "swill"—the hot, fermented mush left over from making booze. The cows got so sick their tails literally fell off.

The resulting milk was a thin, sickly blue. To hide the rot, they stirred in chalk, starch, and plaster of Paris to make it look "creamy" and white again.

This toxic cocktail killed thousands of babies a year. It was the ultimate 19th-century scam: selling literal poison disguised as a wholesome breakfast staple.

Hold on, why would the milk turn blue just from bad food?

It’s a sign the cow was running on empty. Real milk is white because fat and protein reflect light. But these cows were so malnourished they couldn't produce those solids.

Without fat, the liquid becomes translucent. Just like a vein under your skin looks blue, light scatters through this watery mess and gives it a ghostly tint.

It was essentially "starvation juice." That blue color was nature's warning that the bottle contained zero actual nutrition.

Wait, so the blue color was just an optical illusion from the missing fat?

Exactly. It’s called the Tyndall effect, and it’s the same reason the sky looks blue or why some people have blue eyes.

Think of healthy milk like a room full of big furniture. Light hits the fat and protein and bounces back everywhere, making it look solid white to our eyes.

But in this "starvation juice," the furniture was gone. The liquid was just water with tiny particles that only scatter blue light. It wasn't blue because of a dye; it was blue because it was hollow.

Are blue eyes actually "hollow" like that milk was?

It’s true—there is actually zero blue pigment in a blue eye. If you could look close enough, you’d just see a clear, colorless layer over a dark background, much like that watered-down milk.

The color is just light fumbling around and scattering back at you. It’s the same physics as the sky—just a lot of "hollow" space and tiny structures playing tricks on your vision.

While we find blue eyes striking, in the 1850s, that same "hollow" look was a terrifying sign that a bottle had no nutritional value left.

Does this mean brown eyes are the only ones not faking it?

Exactly. Brown eyes are the neighborhood's straight-shooters. They’re packed with melanin, the same dark pigment that tans your skin. It’s a solid, physical color that doesn't need to pull optical stunts to get attention.

Green and hazel eyes are just indecisive. They have a tiny bit of yellow pigment, but it’s a thin coat. The "blue" light scattering still leaks through, creating a muddy, mixed-up look.

It’s like someone ran out of brown paint halfway through. You’re seeing a little real pigment and a whole lot of that "hollow" light trickery at once.
